Once the horse stands up, press the character button to jump onto its back.

Destroy bricks near the rocks you blew up earlier to gain access to a torch, then carry the torch to the nearby cannon and stand nearby to melt off the plant on it until you can pick up the cannon. Construct them into a platform, then head back to the left side of the beach.
